This is absolute­ly one of my favorite “go to” recipes. It is so sim­ple and the com­bi­na­tion of fla­vors appeals to every­one. I am using this “fill­ing” in tor­tillas here, but you can stuff pep­pers, toma­toes or just eat as is….hot or cold! I am always hap­py when I peek in the fridge and I have a lit­tle stash for a snack.

The Ole Xtreme Well­ness tor­tillas are superb. They hold up beau­ti­ful­ly filled, frozen and reheat­ed in the microwave. You can also por­tion this mix­ture into indi­vid­ual por­tions into sand­wich bags, freeze and reheat with­out a tortilla….really great on top of baby greens!

Greek Turkey Wraps

Savory Greek Style Wraps filled with Sea­soned Turkey, Pep­pers, Green Onion and Feta Cheese
Serv­ings 8 wraps

Ingredients

  • 3 large red, orange or yel­low bell pep­pers any com­bo of the three you like, diced
  • 1 large green bell pep­per diced
  • 1 bunch green onions diced
  • 1 table­spoon olive oil
  • 2 pounds ground turkey 93% lean
  • 2 table­spoons lemon juice or to taste
  • 1 table­spoon dried oregano or to taste
  • 1 tea­spoon kosher salt or to taste
  • 1/​2 tea­spoon ground nut­meg or to taste… fresh ground is best
  • 1/​2 tea­spoon pep­per or to taste
  • 1 cup feta cheese crum­bled
  • 8 large flour tor­tillas

Instructions

  • Dice pep­pers and green onions.
  • Heat oil in a large non stick skillet.
  • Add turkey, cook until turkey is browned, add pep­pers and cook anoth­er 5 min­utes, drain in a colan­der to remove excess mois­ture or use a large spoon to remove.

  • Add sea­son­ings and lemon juice, cook about 1 minute.
  • Remove from heat and stir in feta and green onions. 
  • Cool and wrap in tor­tillas. These tor­tillas are by far the best I have found.
