This is absolutely one of my favorite “go to” recipes. It is so simple and the combination of flavors appeals to everyone. I am using this “filling” in tortillas here, but you can stuff peppers, tomatoes or just eat as is….hot or cold! I am always happy when I peek in the fridge and I have a little stash for a snack.

The Ole Xtreme Wellness tortillas are superb. They hold up beautifully filled, frozen and reheated in the microwave. You can also portion this mixture into individual portions into sandwich bags, freeze and reheat without a tortilla….really great on top of baby greens!

Greek Turkey Wraps

Savory Greek Style Wraps filled with Seasoned Turkey, Peppers, Green Onion and Feta Cheese

  • 3 large red, orange or yellow bell peppers (any combo of the three you like, diced)
  • 1 large green bell pepper (diced)
  • 1 bunch green onions (diced)
  • 1 tablespoon olive oil
  • 2 pounds ground turkey (93% lean)
  • 2 tablespoons lemon juice (or to taste)
  • 1 tablespoon dried oregano (or to taste)
  • 1 teaspoon kosher salt (or to taste)
  • 1/2 teaspoon ground nutmeg (or to taste… fresh ground is best)
  • 1/2 teaspoon pepper (or to taste)
  • 1 cup feta cheese (crumbled)
  • 8 large flour tortillas
  1. Dice peppers and green onions.

  2. Heat oil in a large non stick skillet.

  3. Add turkey, cook until turkey is browned, add peppers and cook another 5 minutes, drain in a colander to remove excess moisture or use a large spoon to remove.

  4. Add seasonings and lemon juice, cook about 1 minute.

  5. Remove from heat and stir in feta and green onions. 

  6. Cool and wrap in tortillas. These tortillas are by far the best I have found.
