Here’s my take on making stuffed peppers.…be creative! There are so many options and combinations to put together.…go with what sounds good to you!
You could stuff them with this recipe for a vegetarian version or how about this one for a totally different take…
Remember to make more than you need and freeze individually wrapped extras for an easy lunch or dinner when you aren’t in the mood to cook.
And definitely try the Barilla No Boil noodles for your next round of manicotti!

Love this video. My kids and I aren’t big fans of ricotta cheese, so I use cottage cheese in lasagna, but not sure it would work in manicotti. Do you have a suggestion of another cheese I could use? Yours looks so good!
I use cottage cheese in my lasagna too Lisa…I think it just might be too loose for the manicotti.…let me think a bit on another option! 🙂
The whole wheat version of that lasagna noodle is amazing too.

I have been looking for a baking rack and sheet for quite awhile. Any suggestions on a brand to find on Amazon? The one with “best” reviews also had people say that it warped with cooking over 350 degrees. Or other place to purchase?

I do 1/2 cottage cheese and 1/2 ricotta, Plus an egg and parmesan cheese my lasagna filling.
